The chef's tasting menu evokes all the aspects of hallmark European cuisine. Poached veal tenderloin is remarkably succulent, the onsen egg is paired with a Parma ham crisp, and the white-wine foam atop the Arctic char is a testament to Hartmann's range and skill.
